Speaking of Monster Hunter, the Rise demo did a good job of this. Or at least something different, so that when they get the game that opening first part is still a fresh experience. As well as B) put players in a position to do more than the first mission or three. On the other hand, a proper demo can: A) Give a player much more TIME to get used to controls and understand their importance, even if it requires replaying the demo multiple times. You'll get some flavor of the game of course, but far from the full meat of it. If you tell someone to do this with any Monster Hunter game or Souls-like game you probably won't get any real use out of it for example. The more important, for the purpose of why the OP wants a "demo", is that 90 minutes isn't much time to get used to a new control scheme. If you or someone else are find with all that than go ahead, I won't try to stop you. A prolonged power outage, internet problems, Steam's whimsy, and many other factors could easily "force" you to keep the game. Among others, the fact that you have to put up money first, which is quite a bit different from a free demo. If you don't like the game, get a refund.
